This carrot salad recipe from the book is a simple but delicious side dish from Fez. It is sweetened with oranges and a bit of sugar, spiced with cinnamon, and perfumed with orange-blossom water. I think, a perfect side dish for grilled chicken.

Recipe: Carrot Salad with Orange Juice and Orange Blossom Water

Ingredients:

  • 1 lb 2 oz grated carrots
  • 2 oranges, segmented and cubed
  • 3 oranges, juiced
  • 1 lemon, juiced
  • 3 tablespoons orange blossom water
  • 3 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon cinnamon

Procedure:

  1. Place the carrots and segmented oranges into a bowl.
  2. Mix the rest of the ingredients except the cinnamon into a bowl, whisk to combine, and pour over the carrots. 
  3. Cover and chill for at least an hour.
  4. Sprinkle with the cinnamon before serving.
