Niqiliurniq: A Cookbook from Igloolik by Micah Arreak


 

Niqiliurniq by Micah Arreak celebrates the Igloolik cuisine in northern Canada by showcasing what is eaten there.

Igloolik is a remote area and Arreak talks a great deal about the benefits of residents locating and preparing local foods around them. Local foods may be healthy, free from pesticides, and readily available, but preparing them you should always prepare them using safe cooking methods, including proper temperatures. Trichinosis is found in walruses and polar bear, local meats, and eating any raw, fermented or undercooked meat with this worm can make you sick.

The local fish and meats used throughout the cookbook are Arctic char, maktaaq (or maktaq, which is the skin of beluga whale or narwhal), seal meat, and caribou. Local produce include labrador tea leaves, and mountain sorrel.

All in all, a great book about the cuisine of the northern part of Canada by cooks who live there.
